This hands-on cooking class in Hanoi pairs a local market visit with a guided lesson in Vietnamese cooking, taking you from fresh market ingredients to a home-cooked meal over the course of one morning, finishing with a certificate to take home. It suits food enthusiasts and anyone curious about Vietnamese culture as much as those who simply want to learn a few new recipes.
Market walk at Yen Thai
You start at Yen Thai Market, where stalls sell fresh produce, herbs, and spices, and you get a sense of the daily routine of local shoppers and vendors. Your instructor points out the ingredients that go into the dishes you are about to cook, and you pass the historic Yen Thai Communal House along the way, learning a little about its background.
Cooking four Vietnamese dishes
Back at the cooking space, a local instructor guides you step by step through four classic dishes: crispy fried spring rolls, papaya salad, pho rolls, and mixed pho. You work with traditional ingredients and techniques, and you also learn to make Hanoi's egg coffee, a local specialty built on strong coffee and whipped egg yolk.
The stories behind the food
While you cook, your instructor talks through the history and cultural background of each dish, explaining the balance of sweet, sour, salty, and fresh flavors that define Vietnamese cooking, along with the reasoning behind each technique.
Once the cooking is done, you sit down with the other participants to eat the dishes you made together, with seasonal fruit served afterward. You take home a Certificate of Completion and photos of your creations as a record of the class. Rayna's Hanoi team arranges the booking and instructor, and stays reachable if you have questions before your class.
